The main focus of the scientific interests of Professor Boban relates to the biological effects of wine and its constituents on health, primarily those effects on the cardiovascular system and mechanisms of antioxidant activity of wine. Currently, he is investigating how different enological procedures in wine making (changes of maceration time, partial/complete dealcoholization, thermal treatment of wine, aging of wine, etc.) may affect its biological activity. This also includes investigation of potential differences in distinctive biological effects between wines obtained by such technology in the production of both white and red wines.
